Recipe Of The Week: Edikaikong
Our recipe for the week is edikaikong; it is a wonderful Nigerian traditional soup recipe to enjoy with the family. It’s another beautiful week for our Lagosmums family, and we bring you another beautiful recipe to cook for your loved ones. This week we are looking at a south-eastern dish made popular by the Efiks, Edikaikong soup is a healthy choice made with fluted pumpkin leaves. The easy-to-follow recipe is courtesy of Mamador.

- 3 bunches of chopped pumpkin leaves (Ugwu)
- 1 bunch of water leaves
- 1kg (beef/kpomo/shaki/goat meat)
- 2 tablespoons crayfish
- Smoked Fish
- Stock Fish (optional)
- Shrimps (optional)
- 1/2 cup Mamador Virgin Palm Oil
- 2 medium onions
- 1 cup of Periwinkles (optional)
- Other meats of your choice can be added – beef, ponmo, tripe, shaki or goat meat
- 2 Seasoning cubes
- Salt to taste
- In a medium-sized covered pot, add the meats (beef, ponmo, tripe, shaki or goat meat) and boil with salt, water, seasoning cubes, and onions.
- Cook all meats until tender and there is little to no water left in the pot for 30-40 mins. Just before the meat is tender, add shredded smoked fish.
- Once the water is dry, add the crayfish, periwinkles, pepper, and 2 drops of Mamador virgin palm oil and stir into the meat. Cook for 5 minutes, then add the Waterleaves, stir and cook for another 3 minutes.
- Add the pumpkin leaves (Ugwu) and cook for 5 more minutes. Check for seasoning and add more salt if needed. Stir often so it does not get burnt. Note – Do not add water.
- Serve with Pounded Yam, Garri, Semolina, or any other swallow of your choice – that’s it! Enjoy.
